MUSHTI DOSA

MUSHTI  DOSA

This dosa is generally prepared by GSBs in South Kanara. The dosa's texture is very soft and also it is very tasty.


Ingredients:
raw rice-4cups,
urid dal-1cup,
methi seeds-1tsp,
grated fresh coconut-2cups,
salt to taste.


Method:
Soak rice methi seeds and dal together for 5hrs.

Grind with coconut  to a soft dosa batter. Ferment it for 6 to 8hrs or overnight.

The dosa batter is ready.

Can make thin as well as thick dosas.

Any kind of chutney will go well with this dosa.

MULTI-GRAIN VADA

MULTI-GRAIN VADA

This vada is prepared with  grains and is very tasty. It is also very healthy as it is full of proteins. The vada does not absorb oil, while frying. The preparation is also is easy. A good snack for the evening. Grains can be chosen as per choice.
Ingredients:

One tablespoonful(heaped) of  rice or ragi and 3 or 4 types of  lentles,like moong, chouli, mattar, whole urid or urid dal, chana and tur or turdal .

onions-2,

green chillies-5,

ginger-1''long,

curry leaves,

hing-1/8tsp,

salt to taste,

oil for frying.


Method:
Soak the grains together in water for 6hrs.

Chop the onions, cut the cleaned green chillies, ginger into small pieces.

Grind the grains in a mixer to a coarse texture, without adding water.

Add the chopped items,salt and curry leaves and mix well.

Heat oil in a pan.

Make vada by pressing in-between the palms and deep fry.

When one side is done, turn to the other side.

Vadas can be fried in batches to have them cooked well.
